Went here for a quick bite right after driving from Boston to Brooklyn.

Environment: very inviting, clean, we went and there was a good amount of people but they definitely gave us their undivided attention.
They seated us in a warm booth (very cold today)

Food: we ordered 2 ramen, the shoyu  and the wagyu  beef ramen. I love my ramen, the beef was tender and the broth was rich. My boyfriend believe they probably messed up on his order. He ordered the shoyu  ramen and it comes with chasu or some sort of protein  and he asked for an extra pork belly on top but I think they switch it out instead.
I chose the lunch combo (ends at 4), 1 ramen, 1 side of gyozas  and 1 soda. My boyfriend did the same but with a beer.
The gyozas  was amazing and we also ordered the wagyu  buns and It was amazing.

Price: the lunch combo was 18 bucks, which is a great deal to me.

Overall: would go back and eat more. Nothing can go wrong with a hot bowl of ramen on a cold autumn day.

    I love this place!

    Ambience: casual and cute.
Luckily, every time that I've been here, I am seated fairly quickly but the place is not that big so there can be a wait at times.

Food: This time we ordered the wagyu beef buns, the buta kimchi buns, spicy miso and triple shrimp. Everything came out pretty quickly and everything was delicious!

This is a great place for lunch (if you have an hour lunch break) and dinner.

Looking back at my bachelor life (a lifetime ago) ramen always meant it was a day or three away from payday and it was time for 10 cent dinner, complete with flavor packet and a healthy dose of Tabasco.

This amazing restaurant does NOT serve that ramen.

They serve hand-crafted bowls of goodness.  Excellent suggestions from a waiter for a couple of first timers and voila! a fabulous mean was had.

Hand crafted noodles, broth that has cooked for 8 hours and first rate ingredients bring you to a light, easy meal that fills you up and delights your senses.

Truly, one of my favorite Brooklyn restaurants.

My suggestion would be to go for a complete version first and then, branch out on your own and experiment with their 'build your own ramen'.

Being that I'm a ramen soup type of girl i was expecting more from this place. I decided to stop there for a quick bite to eat and settle upon the menu which had limited types of soups to offer quite disappointing. I chose the spicy miso soup lets just say i was not pleased first it came to me warm not hot the pork belly was cold i felt like i wasted my time going there.  Will i go back probably not.

Ganso Ramen was the closest location when I was in Brooklyn visiting a friend and had a hankering for a bowl of ramen... and overall, I was pretty happy with the full experience. I visited on a Monday lunch, so likely can't comment on how crazy busy this place gets, but there was still a reasonably healthy crowd for Monday lunch.

I got the lunch special with a bowl of ramen, half order of gyoza, and a drink for a pretty reasonable price. I came with a friend who wasn't especially hungry, so just got edamame and another half order of gyoza. Service was not especially fast, but not ridiculously slow, so was average for a NYC establishment, however, I would be concerned how they might keep up if the restaurant was actually busy. The interior is quite nice with wood booths and tables throughout.

Still, to the main event... the Ramen. I ordered the spicy miso and was presented with a delightful slightly spicy broth and two fantastical pieces of chasu pork. The chasu is thick cut and has a good mouthfeel to it. The golden egg is always a good touch to ramen and was pretty good. The noodles were also the wavy noodles I prefer with a good texture and chew. Overall, a very good bowl of ramen. The broth may not be the absolute most flavorful one I've had in my life, but definitely not lacking in flavor.

The gyoza was a bit lackluster to be honest as they stuck together quite a bit when served. While I appreciated them being presented on a hot skillet to emphasize the crispiness of the skin, the meat and dipping sauce were pedestrian. The edamame was also typical.

However, I don't think a restaurant needs to have every aspect of their menu be mindblowing to be a good restaurant. Ganso is a ramen shop and their ramen is very good.

Bottom line, a solid ramen choice if you're in the area. While service might be questionable, as long as you're not in a rush, Ganso is a great place to eat.

Came by for a quick lunch and got the spicy miso ramen. The flavor was pretty good, noodles were nice, pork belly pieces were delicious, and the soup wasn't bad. Only gripe was with the price and I didn't feel completely satisfied.

Ganso Ramen is where I like to get my ramen fix in Downtown Brooklyn. Some nights you definetly have to wait to be seated as it is one of the better yet affordable restaurants in the area but the service is good and I think it is well worth the wait.

    - The Buta Kimchi Buns are very flavorful and I enjoy them but the roasted pork belly could be tenderer.
    - The Ganso wings are also very good. I really like the sauce they are coated in.
-The Spicy Miso is a favorite. It has just the right amount of spice that is cut by the noodles. The pork is delicious.
    - I like to get the Tori Shio when I want a clearer broth and something classic. The chicken broth is clean and chicken thigh that comes with it is always cooked just right.
-The triple shrimp is by far my favorite. For a ramen that has dried shrimp and chili fried shrimp, it is not overpowering. It has the slightest kick to it from the chilli. It is my go to in the winter months.

The ramen was a bit salty and the pork buns were different since they contain kimchi. The buns are good, but are definitely not my favorites. Their Ganso wings are also very delicious and the wings at the bottom tend to be very saucy if you're into that.

The service was amazing, which is why I'm giving it 4 stars.

One of the things I will remember most about the Ramen here is their pork chashu. It is seared on one side so it is the perfect amount of crispness and tenderness.

The ambiance and internal environment was very cute and the restaurant is well decorated!

Heads up for any other vegans out there: the vegetarian offering (yasai ramen) contains ramen noodles that are apparently made with butter--the option I was given was to sub in white rice. I gave it a shot and unfortunately have to report that it's not a worthy dish--the rice just makes a sad stand-in for ramen noodles, and beyond that the broth is extremely bland. Like one other reviewer, I had to dump about a teaspoon of the garlic chili oil into my bowl to impart enough flavor to make it palatable.

Ganso--I would recommend Sun Ramen's eggless noodle variety which is delicious and vegan, and currently even available as a make-at-home-ramen-bowl kit at Whole Foods.

I came to try it out while I was staying over at the Holiday Inn around the block.

I had the spicy miso ramen and my wife had the cold noodles that you dip into the broth.  We also ordered the and Gyoza and the buns as appetizer.

The ramen was not good by any means, but it wasn't terrible either.  I give it a 70 / 100 average at best.

I have to say though that the Buns were pretty decent. 80/100

Service was great, the servers were attentive but not sure if i'll be coming back here again for their ramen.

Having lunch in this delightful Japanese restaurant that features ramen, was completely by accident.

It had been a grueling shopping excursion in busy Downtown Brooklyn on the day before the December "Polar Blast".  Everyone on the planet, just as I, must have been shopping for a very heavy coat, new boots & winter clothing.

Having purchased way more than I could comfortably carry, I struggled back to my vehicle.  It was parked blocks away in a postage stamp sized spot, the only street parking available when I began my shopping mid morning.

I slid into the vehicle, exhausted and enormously thirsty, to collect myself.  There was only time for a quick lunch before heading back to Williamsburg to pick up my Grandson from Preschool.  No way could I get far in my current state of collapse.

    Yelp to the rescue!!

Searching for the closest restaurant, I was relieved to find one right across the street.  It mattered not the type of food.  As long as they had plentiful water and something edible, that was the place for me.

I was delighted to walk into a small Japanese restaurant with a modern, efficient decor.  They made great use of the space, even including narrow 2 person booths across from the grill.  It appeared to be a popular lunch choice for many.

The server understood my desperate need for water and was completely attentive, returning with numerous refills.

I ordered one of the two Lunch Specials.  The Tonkatsu was Panko-crusted Berkshire "black" pork shoulder, tonkatsu sauce, served with kale salad, potato salad and steamed rice.  There couldn't have been a better choice.  The pork was a perfect cut with a tasty sauce.  Both the Kale & Potato Salads were awesome.

I ate every bite in plenty of time to inch out of my postage size parking space and head to Williamsburg.  My server even gave me another water "for the road".
